Makes one butter chicken to serve 6. Sear 1kg diced chicken thigh, set aside. Soften 3 sliced onions in ghee/butter with ginger paste, garlic and 1 packet of Butter Chicken spice blend. Add 1 bottle (700ml) passata and 1 tablespoon tomato paste; cook 2 minutes. Blend the sauce until silky, then stir in 1 cup cream and the chicken and simmer ~45 minutes. Finish with 2 tablespoons maple syrup and 50g butter. Serve with basmati rice or naan. (Full recipe on the pack.)
